If using fresh rice noodles, separate them gently. If using dried noodles, soak them in warm water until soft, then drain.

Mix dark soy sauce into the soaked noodles and set them aside.

Chop the kale and mince the garlic.

Heat a wok then add oil and stir-fry the garlic until fragrant.

In the same pan, push everything to one side. Crack an egg in and scramble it until cooked.

Toss in the chopped kale and stir-fry everything for about 1-2 minutes on high heat.

Add the seasoned noodles to the wok.

Pour in light soy sauce, mushroom sauce, white pepper, and salt. Toss everything together to coat the noodles evenly.
