Fill a pot with 6 cups of water and bring it to a gentle boil over medium heat.

Cut the cabbage it into 4–6 wedges (depends on the size), keeping the core intact so the leaves don’t fall apart. Then rinse them thoroughly.

Heat 1 tablespoon of oil in a skillet over medium heat. Once hot, sear the cabbage wedges for about 2 minutes per side, or until slightly browned. Set aside.

Rinse the pork ribs in salt water (2 tbsp of salt with water), then cut them into bite-sized pieces.

In the same skillet, add the pork ribs and sear until they change color or begin to cook through slightly. Then add the garlic, cilantro roots, and shiitake mushrooms. Stir-fry for about 2 minutes.

Add the pork mixture to the pot of boiling water. Simmer for 15 Minutes.

Transfer the seared cabbage into the pot.

Add soy sauce, salt, and white peppercorns. Stir everything together.

Cover the pot and simmer on medium-low heat for 45–60 minutes, or until the pork is tender and the cabbage is soft and flavorful.

Ladle into bowls and top with fresh cilantro before serving. Enjoy hot with steamed jasmine rice!
