Cooking Crispy Pork Belly (Moo Krob) with Air Fryer:

Use a knife or fork to poke holes all over the pork skin.

Cut into the skin, deep enough to reach the meat but not through it.

Place the pork belly skin-side down in a bowl with vinegar and let it soak for 15-20 minutes. The skin will become paler.

Remove the pork from the vinegar and pat dry.

Generously rub salt all over the skin.

First Round: Place the pork belly skin side up in the air fryer. Set at 100°C (212°F) for 20 minutes to remove moisture.

Second Round: Flip the pork belly skin side down. Increase the temperature to 200°C (392°F) and air fry for 15 minutes to cook the meat and develop color.

Third Round: Flip it back with the skin side up. Air fry at 200°C (392°F) for another 15 minutes or until the skin is crispy and puffed up.

Remove the pork from the air fryer, cut off the twine, and slice into bite-sized pieces.
