When I feel unwell or during the winter, I like to have something quick and easy to cheer me up. This easy spinach soup is a simple and nourishing dish that's perfect for a quick meal. With just a few ingredients like spinach, eggs, and garlic, it comes together in no time and is full of flavor. Ideal for any occasion, it’s both healthy and satisfying!

Cooking Easy Spinach Soup:

Blanch the spinach for 1-2 minutes and set it aside.

Crush the garlic lightly and set aside.

Crack the eggs and beat them. Heat a wok with oil on low heat, add the beaten eggs, and stir gently until the eggs start to set. Remove and set aside.

In the same wok, add the water and bring it to a boil. Add the crushed garlic and a pinch of salt.

Add the scrambled eggs into the wok and stir gently to disperse the eggs.

Add the blanched spinach and continue boiling for another 1-2 minutes.

Season with vegetable seasoning powder, pepper, and soy sauce to taste. Serve and enjoy!

Tips
Normally, when I was in Thailand, I used ivy gourd to make this soup, but I tried it with spinach, and it turned out to be a really good ingredient for this recipe too. It looks simple, but trust me, the taste is amazing. Adding a pinch of pepper before serving makes it even better.
