It’s one of my favorite summer salad recipes for dinner because it’s easy, flavorful, and you don’t have to spend forever cooking. Just a quick grill, toss everything together, and you’re done!

Cooking Grilled Pork Salad with Cucumber:

Pat the pork dry then rub it with 1 tablespoon of fish sauce. Massage it in until the liquid is absorbed, then let it marinate for about 10 minutes.

Peel the cucumber and slice it diagonally into thin pieces—if you want extra crunch, soak the slices in ice water for 5 to 10 minutes, then drain. Slice the shallots and tomato thinly. Prepare the ingredients by lightly crushing or finely chopping the bird’s eye chilies. Finally, chop the green onion and herbs, and set them aside.

Grill the pork on a grill pan, electric grill, or air fryer until it’s fully cooked and nicely charred. You can also pan-fry with a bit of oil. Once cooked, let it rest for a few minutes, then slice into bite-sized pieces.

In a mixing bowl, add in fish sauce, sugar, lime juice, and water. tir until the sugar is dissolved. Taste and adjust to your liking—more lime for tang, more sugar for sweetness, or more fish sauce for saltiness.

Add chilies, shallots, and tomato into the dressing. Mix well. Then toss in the cucumber slices and grilled pork. Add green onion and herbs last, giving everything a gentle mix.
