When the temps rise, I crave meals that are light, zesty, and full of fresh crunch—and this Grilled Pork Salad with Cucumber is exactly that. It’s one of my favorite summer salad recipes for dinner because it’s easy, flavorful, and you don’t have to spend forever cooking. Just a quick grill, toss everything together, and you’re done!

Steps

  • Cooking Grilled Pork Salad with Cucumber:

    1. Pat the pork dry then rub it with 1 tablespoon of fish sauce. Massage it in until the liquid is absorbed, then let it marinate for about 10 minutes.

    2. Peel the cucumber and slice it diagonally into thin pieces—if you want extra crunch, soak the slices in ice water for 5 to 10 minutes, then drain. Slice the shallots and tomato thinly. Prepare the ingredients by lightly crushing or finely chopping the bird’s eye chilies. Finally, chop the green onion and herbs, and set them aside.
