Cooking Pork Congee:

Wash the uncooked rice until the water runs clear. Drain well.

Place the rice in a freezer-safe bag and freeze for 8-12 hours. This step helps the rice break down faster during cooking.

In a bowl, combine ground pork with cornstarch, baking soda, and ground white pepper.

Add this mixture to the mixed ground pork along with egg white and soy sauce.

Knead until well combined. Refrigerate while preparing the congee.

Bring water to a boil in a pot with the lid on. Once boiling, remove the lid and add the frozen rice and season with salt.

When the mixture returns to a boil, reduce the heat, cover, and simmer for 15 minutes.

Shape the pork mixture into small meatballs. After 15 minutes, gently add the meatballs to the pot. Stir lightly, cover, and simmer for another 5 minutes.

Ladle the congee into bowls. Top with julienned ginger, chopped green onions and ground white pepper.
