Stuffed Omelette is a simple yet flavorful vegetarian dish featuring a thin, golden omelette filled with a savory mixture of vegetables and seasonings. Once stuffed, the omelette is carefully folded and flipped onto a plate, creating a neat, delicious package.

Prepare the Ingredients:

Chop the onion, carrot, asparagus, scallion, coriander and tomato into small pieces.

Crack the eggs into a bowl and whisk until smooth.

Cook the Filling:

Heat 1 tablespoon of oil in a pan over medium heat.

Once the oil is hot, add the chopped onion and sauté until translucent.

Add the plant-based mince , breaking it up as it cooks until almost done.

Stir in the carrot and cook for a minute.

Season with mushroom sauce, light soy sauce, pepper, and tomato sauce, mixing well.

Add the tomato and asparagus, and cook until the vegetables are tender and well combined.

Stir in the scallion and coriander, mix thoroughly, then remove from heat and set aside.

Cook the Omelette:

Heat the remaining 1 tablespoon of oil in another pan over medium heat. Swirl the pan to coat it evenly with oil.

Pour the beaten eggs into the pan, tilting to spread them evenly.

Cook until the eggs are almost set.

Assemble the Omelette:

Place the prepared filling mixture in the center of the omelette.

Fold the omelette over the filling to form a neat square, enclosing the filling. You can turn off the heat in this step.

Carefully slide the omelette onto a plate, ensuring the seam side is down. By using a plate covers the stuffed omelette and flip the pan.

Tips
- When you cook the filling, make sure it’s not too watery because when we put it into the omelette, it will make the omelette too soggy and hard to fold.
- For the omelette itself, when you tilt the pan, make sure it’s not too thin because it will crack when folded.
