Cooking Thai Chicken Noodle Soup:

Bring water to a boil in a large pot. Add the sliced galangal, coriander root, garlic, cinnamon sticks, star anise, and black peppercorns. Season the broth with rock sugar, soy sauce, black sweet soy sauce, and chicken seasoning powder.

Once the broth is boiling, add the chicken pieces. Turn the heat to low. Add the sliced white radish and let everything gently stew for about 1 hour or until the chicken is tender and falling off the bone.

In this step, you can taste and adjust the flavors to your liking. Remove the chicken and radish from the broth. Strain out the spices and herbs using a fine mesh strainer. Return the clear broth, chicken, and radish to the pot. Keep it warm over low heat.

In a separate pot, bring water to a boil. Blanch the rice noodles until soft, then blanch the bean sprouts or any leafy greens.

Place noodles and veggies into serving bowls. Ladle the hot soup over them, including some chicken and radish. Top with crispy fried garlic, ground pepper, and chopped coriander. Serve with chili flakes, fish sauce, or vinegar on the side for optional seasoning.
