Cooking Stir-Fried Leeks with Tofu:

If using firm tofu, cut it into cubes and fry until crispy. If using egg tofu, slice it into rounds. Fry the tofu until the outside is golden and crispy, then set aside. For a quicker option, you can use puff tofu directly.

Lightly crush the garlic to release its aroma.

Slice the red chili and set aside.

Cut the leeks into thin strips, about half a centimeter thick. Rinse and drain well, then set aside.

Heat a pan over medium heat and add cooking oil. Once the oil is hot, add the crushed garlic and stir-fry briefly until fragrant.

Add the minced pork and stir-fry until partially cooked. Then, add the leeks and season with oyster sauce and light soy sauce. Stir-fry briefly until the leeks are slightly tender.

Add the puff tofu and mix well, ensuring it absorbs the flavors of the sauce. If too dry, add a little water. Stir in sliced red chili if you prefer it cooked. Enjoy with steamed rice or rice porridge.

Tips
When stir-fried, leeks usually take about 2-3 minutes to soften while retaining a slight crunch. If you prefer them softer, you can cook them for a bit longer, but they don’t require much time to become tender and flavorful.
