Ginger Stir-Fried Chicken

It’s a popular stir-fry dish made with sliced chicken, fresh ginger, garlic, onions, and mushrooms. The dish has a fragrant, slightly spicy kick from the ginger and is typically stir-fried in a light soy-based sauce.

It’s commonly found in Thai home cooking and local restaurants because it’s easy to make and pairs perfectly with steamed jasmine rice.

Some variations include adding chili for heat or using pork or shrimp instead of chicken.

Tips

  • Usually in Thailand, wood ear mushrooms are used for their crisp, crunchy texture. However, you can use any mushroom you prefer—or skip them altogether if you like.
  • I use ginger that is neither too young nor too mature. If it’s too young, it lacks spiciness, aroma, and a strong ginger flavor. On the other hand, if it’s too mature, it becomes fibrous and less enjoyable to eat.

This is really delicious! The prep time always takes me longer than the suggested time - old hands never work as fast as they used to - but the cooking time is spot-on. My only caveat is that it's easy to over-fry the garlic and turn it bitter. Maybe I need to use a proper wok, and not my favourite flat pan. Anyway, it's a truly lovely, simple recipe that will bring back memories of authentic Thai food in Thailand!
