This is really delicious! The prep time always takes me longer than the suggested time - old hands never work as fast as they used to - but the cooking time is spot-on. My only caveat is that it's easy to over-fry the garlic and turn it bitter. Maybe I need to use a proper wok, and not my favourite flat pan. Anyway, it's a truly lovely, simple recipe that will bring back memories of authentic Thai food in Thailand!
